Baking in Lockdown
When lock down first started the whole country went mad for baking and you couldn't get flour anywhere. I will admit to being one of those who baked a lot. Unfortunately I ate a lot too so put on a lb or 2 and soon stopped!!
Here's a list of what I made.....
Banana Loaf - A good way of using up all those "rusty" bananas.
Lemon Drizzle Cake - A request from hubby. It didn't last very long :0)
Brownies - Sticky chocolate brownies to be exact. From my old faithful "What's Cooking - Chocolate" book.
Beer Bread - To be honest, I didn't like, I don't see what all the fuss is about and I won't be making it again. Hey ho!
Rocky Road - A request from the younger male in the house. Lots of chocolate, marshmallows and digestive biscuits. If I had made them for me I would have swapped the marshmallows for cranberries.
Pineapple Upside Down Cake - My favourite. I could make this over and over but have made a conscious decision to only make it occasionally so those lbs don't creep back on!
What did you bake whilst in lock down?
Where do I start? Initially I was baking a cake every week and had to give myself a good talking to about overindulging! Then I had a cunning plan, bake a cake, cut it in half and freeze half straight away - then try and forget about it (some chance!) It has helped and already I've lost 2 of the 7 pounds I put on (hangs head in shame!)
ReplyDeleteFreezing half a cake just never entered my mind I just ate the whole thing!! That's probably why I also gained 7lbs. :)
DeleteYour upside down pineapple cake looks so good, it's one I like but haven't made in quite some time (mentally add ingredients to this week's shopping list). I made the lemon drizzle (thank you), another favourite. I have made the beer bread & like when fresh & warm. But my kitchen adventures have been mostly of the pasta kinds. Pasta is a household favourite & we find it comforting & satisfying ... but alas the pounds have put a halt on this. Thankfully we are now in fresh salad season!

Deletei baked a bit, but not nearly the variety you did. about one month before the lockdown, i purchased flour and yeast to make bread, i had never baked bread before. once we were in lockdown, i had yeast and flour and i baked bread and we enjoyed it so much. i think the pineapple upside-down cake would be my favorite. it looks amazing!!!
ReplyDeleteWell done on having a go at bread making for the first time. I did think about baking bread but knew that I would just eat it all in one go with a stick of butter!! Lovely fresh bread is one of my downfalls :0)
